Festive Potato Salad

For Memorial Day, I threw together a last minute potato salad to go with hot dogs on the grill.  I went through my fridge and freezer to see what I had to add to it, and this is what I came up with.

Start by cutting the potatoes into 1 inch cubes.


I had red peppers in the freezer from a Trader Joe’s 69 cents sale. When they are that cheap, I buy about 6 at a time.  I slice them and place them on baking sheets in the freezer.  When they are frozen, I place them into freezer storage bags for later use.  I also had some corn in the freezer.


I diced all the veggies and some chives from my garden.


I did all this while the potatoes were boiling.  it didn’t take long, about 5 minutes until they were fork tender.


When the potatoes were done, I drained the water and and put in a bowl for mixing.




After adding all the veggies and chives, I added 1/4 cup sour cream, 1/4 cup mayonnaise, 1/2 tsp beau monde seasoning, 1/2 tsp celery salt, 1/8 tsp cayenne pepper.  Salt and pepper if needed.


Camden chowed down on this stuff before it was even chilled.


 He really liked it.  Can you tell?
