French Onion Soup and Baby Green Salad



I had some leftover au jus in the freezer from a french dip sandwich recipe.  I decided to make French Onion Soup, a small salad and some crusty bread.


I started by sautéing 3 sliced onions in a pot with some olive oil.


Then I added 2 cloves of minced garlic and dried thyme.



After the onions caramelized a bit, I added the thawed broth.  I added more water to fill the pot and a cube of beef broth, then salt and pepper to taste.

I filled out bowls and added shredded mozzarella to the top because that’s what I had in the fridge.


For the salad, I picked up these tasty baby greens from Trader Joe’s.  I love kale, and this mixture of baby kale, spinach, and swiss chard was irresistible.



I had some hard boiled eggs in the fridge, so I diced up a couple and topped the salads.



Then I drizzled some Olive Garden Italian Dressing on top.  I think that’s what made it so good!




Put it all together with some ciabatta bread and it made a very easy Makeshift Meal.  Yum!
