We are still getting over being sick, so I’m planning a super easy and flexible meal plan this week.
Sunday – Take-out Sushi for Mother’s Day
Monday – Blueberry Pancakes
Tuesday – French Onion Soup
One of the recipes my friend Jamie introduced me too is a really simple French Dip Sandwich using the crock pot. It makes tons of au jus and the leftover can be used to make French Onion Soup. I had some in the freezer, so I’m going to pull it out to make the soup and top it with some cheese and crusty bread.
Wednesday – Ground Chicken Patty Sandwiches
I’ve had these chicken patties in the freezer for a while in case of an emergency. I’m buying chiabatta bread to do double duty for the sandwiches and to cut up for the French Onion Soup.
Thursday – Southwest Eggrolls with Cilantro Dipping Sauce
These are in the freezer as well and are amazing to take out and fry up.
Friday – Grilled Chicken, Corn on the Cob & Dad’s Grilled Potatoes
My friend Jamie is bringing over some marinated chicken to cook out on the grill as long as it doesn’t rain. The potatoes are my dad’s special recipe and a requested staple every time he grills out. I can’t wait to share the recipe with you.
