I had half of an avocado an some iceberg lettuce leftover from a gathering at our house. I usually don’t eat iceberg lettuce, but I knew it would be great for lettuce wraps. I had cooked up a big batch of black beans the other day for some other meals and had some mango in the freezer. The makings for an appetizer came together!
Summer Tropics Lettuce Wraps
1/3 cup black beans, rinsed and drained
1/2 avocado, diced
1/4 cup mango, diced
iceberg or butter crunch lettuce
1 tsp lime juice
2 Tbsp olive oil
1 tsp orange juice or squeezed orange
a drizzle of agave or honey (I used agave)
pinch of salt
1. Mix all ingredients for the dressing together and taste. Add more juice or sweetener as desired.
2. Combine the black beans, mango and avocado in a bowl. Pour dressing on top and stir just to combine. Be careful not to mash the avocado.
3. Spoon filling on a piece of lettuce. Fold and eat!
It’s creamy, a little sweet and crispy from the lettuce all at the same time. I felt like I should have been holding a sweet tropical cocktail to go with it. Serve it as a starter for your next summer get together. I know I will. Maybe I will work on the drink thing too. If you have any suggestions for a drink, I would love to hear them.
