I’ve had my eye on a huge stick of pepperoni at BJ’s for a while with the thought that I could freeze it and use for a lot of different recipes. It’s so much cheaper than buying those little packs of pre-sliced stuff. We are planning on making calzones soon, so I thought it would be good to have some pepperoni to put in them. I didn’t actually grab the 2 1/2 foot long pepperoni. I happened to rendezvous with my family after checking out some other items and found my son wielding it while sitting in the cart. My husband wasn’t planning on buying it, but I was quick to tell him my plan.
I sliced some into rounds and diced some into 1/2 in cubes. I thought I could use the cubes for tossing into salads and pasta salads or baked pasta. I spread them out on a tray covered in aluminum foil and placed in the freezer for a few hours.
I removed them from the freezer and packed into freezer bags. Now I can easily grab a few if I want to make a makeshift pizza for just me on an english muffin.
I love buying in bulk to save money and make my life easier!
