My Dad’s Famous Grilled Potatoes – Update

This recipe traveled around Pinterest last summer when my blog was fairly new.  Since learning how to take better pictures, I’ve been wanting to redo this post and add the recipe in a card format too.  I also discovered that my grandma made these first and then my dad started making them.  Every time he grills, we always ask if he’s making these potatoes.  They really are famous in our family.


Everyone who eats these potatoes loves them.  They are so creamy and flavorful.  They will make your summer grilling amazing!

My Dad’s Famous Grilled Potatoes

Prep Time: 15 minutes

Cook Time: 1 hour

Yield: 6


  • 5-6 potatoes
  • 1 onion, sliced
  • olive oil
  • seasoning salt or salt and pepper
  • 1/4 cup of parsley, chopped
  • 1/2 stick of butter, sliced


  1. Slice potatoes almost to the bottom in 1/4 inch sections.
  2. Place potatoes on a large piece of heavy foil.
  3. Drizzle olive oil over each potato and season with salt generously.
  4. Top with sliced onions and slices of butter.
  5. Sprinkle parsely on top.
  6. Fold up potatoes tightly in the foil and place on the grill for 10 minutes over flame.
  7. Move off direct heat for remainder of an hour flipping over halfway through.
