My mom gave me the idea for this yummy little breakfast or brunch wrap. I just added the spinach. You could easily change this up with some red pepper or spice it up with some Sriracha hot sauce or red pepper flakes. I originally thought I would drizzle a little balsamic vinegar dressing or italian dressing, but I didn’t think it even needed it. It was so flavorful, and not dry at all. This is healthy and quick, so no more stopping for fast food in the morning on the way to work or wherever!
Start with a flour or wheat tortilla and layer with a handful of fresh spinach leaves.
Chop up one hard boiled egg and top the spinach with it.
Sprinkle 1/4 cup of mozzarella over the egg.
Pop in the microwave for 20-30 seconds or until the cheese is melted.
Roll up and serve with some iced coffee.
I had a little helper who was garnishing for me.
I didn’t even notice the piece of spinach (below) resting on top of the wrap until I viewed the photos later.
