Festive Potato Salad – Update

This potato salad is a recipe I made last year for Memorial Day.  I was never happy with the pictures.  They just didn’t do it justice.  Now that I’ve learned how to take better pictures, I wanted to share the recipe again in time for Memorial Day or any other cook outs or picnics you make be attending this summer.  If you want to see a step by step recipe, go here.  Also you can see how my photography has improved from last year.  I bought the ebook Tasty Food Photography last year and learned soooo much from it about basics of photography and food styling.

I called it Festive Potato Salad because it was for a holiday and it seemed festive with all the color from the red pepper, corn and chives.  It’s so creamy and sweet and salty at the same time.  It’s my favorite potato salad to make.  I usually like to change things up, but I make this one by the recipe every time.

Festive Potato Salad

Prep Time: 5 minutes

Cook Time: 15 minutes



  • 5 potatoes, washed and cut into 1 in cubes
  • 1/4 cup red pepper, diced
  • 1/4 cup frozen corn, thawed
  • 3 Tbsp chives, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 tsp celery salt
  • 1/2 tsp Celestial Seasonings Beau Monde Seasoning or other seasoning salt
  • 1/8 tsp cayenne pepper
  • salt and papper, to taste


  1. Bring a pot of water to boil, add the potatoes and cook for about 5 minutes or until fork tender.
  2. Drain the water off the potatoes and let cool in a mixing bowl.
  3. Add red pepper, corn, chives, mayonnaise, sour cream and seasonings.
  4. Stir well and add salt if needed.
  5. Add a pinch of pepper.

Serve it up with some hot dogs, hamburgers or barbecue.  Yum!
