My husband use to be a really picky eater. Since we’ve been married, he has learned to eat so many new things because he was willing to try them. I realized it’s all about how you cook things. The first time I made asparagus for him, I made it this way, but I wrapped it in an Italian cured beef. He said he would eat asparagus everyday if I made it like that. After a few times of making it like that, I weened him off the meat. Sneaky wife! He really liked it without the meat, and we’ve been making it like this ever since then.
Start with washed and trimmed asparagus. To trim, bend the asparagus near the bottom and they will snap naturally where the tough part starts.
Pour 2-3 Tbs of Italian salad dressing or any oil and vinegar dressing over the asparagus.
Toss the asparagus in the dressing and place under the broiler in a baking dish or cast iron pan for about 5-10 minutes or until it starts to char a little. That’s the best part!
It pairs really well with this Grilled Chicken recipe. Try it. I know you’re going to turn into an asparagus lover just like my husband. No more soggy, bitter tasting asparagus. Hello, yumminess!
Hope I convert a few non-asparagus lovers!
