The Best & Most Versatile Grilled Chicken

I want to begin by saying that this recipe is not my own.  I have changed an ingredient to it to accommodate what I actually have in my pantry.  I’m all about not going out and buying one ingredient so I can make a recipe.  If you’ve read any of my previous posts, you’ll know this about me. I give credit to my friend Jamie because she is always bringing over this marinated chicken for John to grill out at our weekly dinner get togethers.  The original recipe is here.  I finally decided to make it myself, and I do have to say it’s so easy.  The marinade keeps the chicken so juicy and tender while grilling and gives it amazing flavor. The Best & Most Versatile Grilled Chicken

Ingredients

  • 3/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoon salt
  • 2 teaspoon white sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 tsp red pepper flakes (optional) I do about 1/2 tsp if the kids are eating it.
  • 5 lbs. chicken (or less) breasts, thighs or any pieces

Instructions

  1. Combine all ingredients in a small bowl and whisk.
  2. Place chicken into a gallon size zipper bag and pour marinade over it.
  3. Seal bag and place in a baking dish (in case of a leak) in the fridge.
  4. Marinate overnight.

 It’s very forgiving too.  I usually combine the chicken and marinade the night before and refrigerate until we are ready to grill the next day.  This last time I made it, I forgot and had to do it in the morning.  It was still amazing! I have found that this chicken is good with almost anything.  We usually have it with My Dad’s Famous Grilled Potatoes and a salad or another vegetable. DSC_0162 We just started grilling a big batch and then using it for several different meals.  I recently made this salad with my Homemade Croutons.  Jealous of my tomato?  My father-in-law got them at a farmer’s market in Florida and sent them back with us after our vacation. DSC_0382 I also have made nachos with this chicken.  Pasta is great too.  I’ve made an olive oil-based version with sundried tomatoes and a chicken fettuccine alfredo.
