Peachy Sweet Tea Mint Julep

Peachy Sweet Tea Mint Julep

This is a fun grown-up drink I made with some leftover peaches, bourbon I had from brining our turkey at Thanksgiving and sweet tea I made for lunch one day.  It’s tastes like summer time in the South.  I can imagine drinking this in a rocking chair on a front porch while the sun in going down.  It would also be a nice addition to your next summer cookout or barbecue.

Start by whirling up a peeled and chopped peach in a blender or food processor.  The leftover can be used in smoothies or swirled into plain yogurt.  Pour 2 cups of sweet tea in pitcher.

Whisk 5 tablespoons of peach puree into the sweet tea.  Add 1/4 cup of mint leaves and crush to release the oils.  Stir in 3 oz. of bourbon.  You can add more if you like a stronger flavor.  I like the sweet tea to shine through.
