Brussel Sprouts with Pancetta

Have you ever wondered how brussel sprouts grow?  Yeah, me neither.  Strolling through Trader Joe’s produce section, I found these babies on the end cap.  Who knew brussel sprouts could be so beautiful?

and tough.  Enough of that.  That’s what the stalk looks like after you pull the sprouts off.

Back to beautiful.  But seriously, if you haven’t tried brussel sprouts since you were a kid, you need to give them another try.

They have great flavor and texture, but also make a really good contrast to the meal when you have a lot of other heavy foods on the menu.


Brussel Sprouts with Pancetta

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 6-8 servings


  • 5-6 cups brussel sprouts, halved
  • 1/2 - 1 cup pancetta or bacon, chopped
  • 2-3 garlic cloves, minced
  • 1 cup chicken broth
  • 2-3 Tbsp parmesan cheese, grated


  1. Sauté the pancetta in a pan on medium heat until mostly cooked.
  2. Toss in the brussel sprouts and salute until browned.
  3. Stir in garlic for 1 minute.
  4. Add the chicken broth and let simmer for a couple of minutes until the liquid cooks down.
  5. Cover and turn down heat.
  6. Continue simmering for 10-15 minutes.
  7. Stir in parmesan and serve.

In short, give brussel sprouts a try.  They might just surprise you.
