Turkey, Cranberry & Arugula Sandwich

Here’s a light and fresh turkey sandwich recipe that I made with my leftover Orange & Jalepeno Cranberry Glaze from my smoked turkey dinner.  You could just use regular cranberry sauce, but I don’t think it would have the same kick.  Also, the rye bread really made the sandwich.  You could use an artisan wheat bread or sourdough too.

Layer on some mayo, turkey and provolone.

Top with arugula just to be fancy.  Spread the cranberry glaze or sauce on the top slice.

Put together and eat.  It’s pure yumminess on a plate.

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 1 sandwich


Turkey, Cranberry & Arugula Sandwich


  • 2 slices rye bread, or sourdough or wheat
  • 2-3 slices of turkey
  • 1 slice provolone cheese
  • a handful of arugula
  • 1 Tbsp mayo
  • 2 Tbsp cranberry glaze or sauce


  1. Spread mayo on bottom slice of bread.
  2. Layer with turkey, cheese and arugula.
  3. Spread cranberry glaze on top slice of bread.
  4. Put sandwich together and serve.

You could also make this a panini or toasted sandwich too!
